Founded in 2023 by two young entrepreneurs, ages 24 and 23, El Chuyo LLC brings bold, slow-braised cooking from Guerrero, Mexico to downtown Norfolk. Established as a local favorite in Norfolk, El Chuyo LLC blends regional Mexican traditions with the vibrant energy of Granby Street, drawing late-night crowds looking for authentic flavors, great atmosphere, and a fresh take on classic Guerrero cuisine.

A Black Truck on Granby

El Chuy's black trailer landed in the heart of downtown Norfolk and earned its place fast — a neighborhood fixture near the Chrysler Museum and MacArthur Center.

How It's Made

The birria takes hours — slow-braised until it falls apart, served with consomé and a tortilla crisped in the fat. It disappears in about five minutes.

The Habanero Warning

The habanero sauce has a reputation on Granby Street. El Chuy doesn't water it down — ask for it if you want the real thing.
